Victory Knives are hand crafted in New Zealand from quality high carbon European steel holding their edge longer and making them easy to sharpen.

Blade and handle materials are MAF & FDA Approved making these knives the first choice for professionals in the catering, fishing, horticulture and meat industries.

High carbon steel blades are harder and have a finer grain structure than stainless steel making them sharper and capable of holding an edged longer, they do require more care and over time and if looked after properly, will develop a protective dark blue grey patina.

Victory carbon knives ship with a thin plastic coating over the blade to help protect them from moisture which cleans off.

High carbon knives have no chromium content - this means they will rust if not cared for, always keep dry and protect with vegetable oil.
